While it's true that this is the primary persona she seems to give out - subdued, patient, caring person who can has a very strong will when the situation calls for it - that's not all. There is a definite mischievous, playful side to her that her closest friends do see on occasion. An excellent example is in Kilika, where after giving the impression of moderating a footrace, she then joins it instead to the surprise of the participants. She's willing to tease people, though she tends to reserve for people who know she means no harm by it - the people who know her best. For example, in Eternal Calm, she teases Wakka for gaining weight, commenting that "he isn't even the one having the baby". This side of her becomes more open as she develops in X-2, through the encouragement of Rikku and the Gullwings to be herself and express herself more, and her teasing and playful side can be seen by more people, friend and foe alike.
From the period between the end of X and Eternal Calm, Yuna has relapsed a little to some extent - she's still not pursuing her own goals and dreams. Part of this though, comes from not having a defined direction. She'd spent most of her more recent life thinking that it would end with the Grand Summoning, and now that she's free of that, she isn't sure where to go. So instead she sticks with something familiar - helping people.
It would also be inaccurate to say that there aren't still very powerful lingering effects from her journey. She still takes the words of those who encourage her to be herself into account. She still quite bluntly refuses to put herself in situations where she might be manipulated or used - even to the point of upsetting the elders of Besaid who encourage her to marry. And when Rikku encourages her to do something for herself, after thinking about how she might disappoint people, the next thing she thinks of is Tidus' words about doing the "adult" thing or doing something for oneself. Even though she doesn't see many of them too often, (or some at all) she still thinks often about her friends and the things they told her.
Eternal Calm shows that traveling - and more importantly experiencing new things - is something she loves, and the desire to do so is mentioned when Rikku offers Yuna the opportunity to hunt down the origins behind the sphere with Shuyin (thought to be Tidus) inside. Overall, the long wait between X and Eternal Calm has left with Yuna with a sense of calm contentment with the way things are now, though there is a silent hope for something more out there, a hope that is answered when Rikku visits with the Sphere of Beginnings. Perhaps the best way to describe Yuna now would be to say she's akin to a plant that's in a pot that's too small for her - it doesn't kill the plant, but it can't really grow until it's put in a bigger pot, or a wider world with new situations and experiences.
